Seared Salmon with Ginger, Mushrooms & Bok Choy

Whole-food protein · omega-3 fats · vegetables

A simple salmon dish with crisp-edged mushrooms, bok choy and a punchy ginger, lime and sesame dressing. The salmon provides a substantial source of protein alongside naturally occurring omega-3 fats, while the mushrooms and greens keep the plate fresh and uncomplicated.

Full of flavour, quick to cook and substantial enough for dinner without needing a long list of ingredients.

Ingredients

For the dressing

  • 2 cloves garlic, finely grated
  • 1 tbsp fresh ginger, finely grated
  • 3 tbsp mirin
  • 2 tbsp tamari
  • 1 tbsp sesame oil
  • Juice of 1 lime

For the salmon & vegetables

  • 600g salmon fillet, cut into 4 portions
  • 300g mixed mushrooms, sliced or torn
  • 2 large bok choy, halved or quartered lengthways
  • 1–2 tbsp coconut oil or butter

To finish

  • 2 tbsp sesame seeds, lightly toasted
  • Fresh coriander, optional
  • Lime wedges

Method

Whisk the garlic, ginger, mirin, tamari, sesame oil and lime juice together in a small bowl.

Heat half the coconut oil or butter in a large frying pan over a fairly high heat. Add the mushrooms and cook until well browned. Add a couple of spoonfuls of the dressing, toss briefly, then remove from the pan.

Add the bok choy to the same pan, cut-side down, and cook for 2–3 minutes until lightly charred and beginning to soften. Remove and set aside with the mushrooms.

Add a little more coconut oil or butter if needed. Place the salmon in the pan and cook until golden, turning once. Cooking time will depend on the thickness of the fillets, you’re looking for a browned exterior with the centre cooked to your preference.

Pour the remaining dressing around the salmon and let it bubble briefly. Return the mushrooms and bok choy to the pan and toss through the sauce.

Divide between four plates and finish with toasted sesame seeds, coriander if using, and a squeeze of fresh lime.

HONOURED NOTE

Salmon is one of those ingredients that doesn’t need much intervention. Pairing it with mushrooms and leafy greens gives you a substantial whole-food meal, while ginger, lime, tamari and sesame bring enough flavour that it still feels like something you’d want to cook for other people.
